This was absolutely delicious. It’s a great cold weather soup, and would be a delicious vegan one (just replace the chicken broth and water with 4c vegetable broth, add 1/4c lentils, and omit the sausages). Very quick and easy to make.
Serves 4
Cook time: 35 minutes
1 c peanuts
1 tsp cumin
1 1/2 tsp turmeric
2 tsp curry
Crush these four (above) ingredients in a mortar and pestle and set aside.
8 oz sausage, diced
1 medium onion, diced
3 tsp sesame oil
Saute these ingredients in a pan for 3-5 minutes on medium heat, until the sausage is no longer pink.
1 bell pepper, chopped
2 tsp minced garlic
Add these two ingredients and saute for two more minutes.
3c chicken broth
1 c water
1 1/4 c lentils (red)
1 tbsp tomato paste
1 bay leaf
Add these ingredients and the peanut mixture, stir, and bring to a boil (on high heat). Lower the heat and simmer for 20 minutes.
1/4 c chopped flat leaf parsley
Stir in the chopped parsley, and serve.
